Culinary Plans
I'm going to be working a mite late today. I had a doctor's appointment today and I need to make up the time. The appointment was mostly to check out if a cholesterol drug I was just put on (yes, age is making me fall apart) is doing anything. I've been taking it for 2 months now and they drew blood today to see how I'm doing.
Anyway, on the way home I'm planning on picking up some soda (yummy yummy soda) and sweet potatoes and while the soda is getting cold I plan on using my pretty mandoline to slide up those taters and then I'm frying them. Sweet potato chips! That's a rather time consuming task so I'll probably make some eggs and sausage for dinner at the same time.
Wednesday I hope to make a stew that'll last me the rest of the week and maybe even Saturday too. And on Saturday I'll be doing a hike with Meetup where we cross a bunch of sewer pipes during the afternoon and in the evening I'm planning on making some mint patties. Wintergreen, if I can find some flavoring before then, otherwise they'll probably be peppermint. The recipe I plan on using is below:
INGREDIENTS
1 (14 ounce) can Sweetened Condensed Milk
1 tablespoon peppermint extract
6 cups powdered sugar, plus additional for kneading filling
8 (1 ounce) squares semisweet chocolate
2 tablespoons shortening
DIRECTIONS
1. In a large bowl, combine sweetened condensed milk, peppermint extract and food coloring (optional). Add 6 cups sugar; beat on low speed until smooth and well blended. Turn mixture onto surface sprinkled with powdered sugar. Knead lightly to form smooth ball. Shape into 1-inch balls. Place 2 inches apart on wax paper-lined baking sheets. Flatten each ball into a 1 1/2-inch patty.
2. Let dry 1 hour or longer; turn over and let dry at least 1 hour. With fork, dip each patty into warm candy coating (draw fork lightly across rim of pan to remove excess coating). Invert onto wax paper-lined baking sheets; let stand until firm. Store covered at room temperature or in refrigerator.
3. Place chocolate and shortening in a microwave-safe bowl. Heat in microwave, stirring occasionally, until melted and smooth. Dip patties in melted chocolate, and let cool on wax paper.
